The most wonderful time of the year…

We’re not talking about Christmas! This is the time of year for Spring and Summer fruits and vegetables! Not that winter vegetables don’t deserve any love, but you gotta admit that this time of year provides us with some of the most colorful, delicious ingredients to include in our cooking! As the days grow longer with sunlight, you may find yourself attending a cookout or picnic. These recipes are perfect to bring along for the hangouts and hot weather!

We apologize for not posting anything for the past two months, BUT we hope that this post and the posts to come make up for it!

For this post we wanted to include easy, fresh vegan recipes that will take advantage of the beautiful summer fruits and vegetables!

Cucumber Dill Hummus


Forgive the picture quality here, but this hummus was just too good to leave in the food processor! We had to scoop it out and try it right away!

If you’ve never made hummus, you should know that it is very easy to make! You will need a food processor to blend the ingredients evenly! Speaking of ingredients, here they are:


As with anything we show you on the blog: try to use organic ingredients when possible!

For this hummus we threw all of these ingredients into the food processor and blended until it was smooth! Not pictured is one clove of garlic and olive oil. The recipe for this hummus can be found here.


I will admit that we decided to add more than two sprigs of fresh dill. We love dill! This hummus was full of flavor and it pairs well with crackers or fresh-cut veggies used for dipping! It will make for a simple, delicious appetizer or snack!

Dr. Joe’s Signature Salad

As many of you may or may not remember, we are employees of Dr. Joe so we hear him discuss recipes and food ideas often. When he first told me about this salad, I couldn’t wait to try it. Now that I have, I have already made it multiple times!


It’s sooo yummy and refreshing…and it sure is pretty!

Like the hummus, this recipe is SUPER easy!

Tomato. Avocado. Mango. That’s it!

You add a dressing of course, but other than mixing that up, this is one of the easiest salads to compose!

Here is the recipe from Dr. Joe’s book: Eating Right… for the Health of It!

Dr. Joe’s Signature Salad

1 ripe avocado, peeled

2 ripe medium tomatoes

2 ripe mangoes

Cut all ingredients into 1/2 inch cubes. Hint: cut avocado in half, remove the pit, then cut two halves in half again, and just peel back at the skin and cut into 1/2 inch cubes.

Peel the mangoes with a vegetable peeler or knife; cut the flesh away from the pit, then cube.

The Dressing for Dr. Joe’s Signature Salad

Juice of 2 limes

3 TBSP thinly sliced fresh basil

2 TBSP gluten-free tamari

2 TBSP rice syrup

1/4 tsp Chinese chili sauce or hot sauce

Mix dressing with fruits and serve!

There you go! Super easy and super delicious! If you’ve ever been to R. Thomas restaurant in Atlanta, GA you can find Dr. Joe’s salad on their menu!



This salad will quickly become one of your favorites! Another tip: if you don’t have the ingredients for the dressing on hand, raw organic apple cider vinegar and olive oil work for a quick, healthy dressing as well!

Buffalo Cauliflower


This is another easy recipe! Cauliflower makes for a great substitution for meat or breads in many dishes! In this case, try to think of these as a healthy alternative to buffalo wings!

You’ll take a head of cauliflower and cut it into florets. Toss in a bowl with olive oil and garlic powder, salt, pepper, paprika (we added some cayenne for an extra kick), then roast in an oven at 425 degrees F for about 20-30 minutes (or until the cauliflower is roasted to your preference) After you remove the cauliflower from the oven, toss in your favorite hot sauce! We used Frank’s Hot Sauce (Don’t worry, it’s vegan!) We omitted the butter from this batch, but there are great vegan alternatives to butter if you want that true hot wing sauce flavor! We used this recipe and made the small changes listed above. There are other recipes that call for using a batter on the cauliflower! If that’s your preferred texture and taste, you can easily use a nut or coconut milk and a gluten-free flour to coat the florets in before baking! There are also many brands of vegan ranch dressing such as Annie’s and Follow Your Heart that you can use for dipping!


Mango Agua Fresca


This refreshing drink is the perfect beverage for a hot day! It couldn’t be any easier!

Instead of blending mango with water, we elected to puree it with some honey for added sweetness. While the recipe does call for either agave nectar or honey, Dr. Joe recommends that you do not use agave nectar due to it being just as bad for you as sugar! If you do decide to use the honey, do not consume more than 2 tablespoons a day! Dr. Joe prefers using pure stevia as a sweetener.

And if you’re feeling super festive, throw in a tiny umbrella!


This could be made with many different fruits! The refreshing possibilities are endless!
